This project focuses on two cornerstone initiatives of Scholars of Sustenance (SOS): the "Food Rescue" and the "Rescue Kitchen" programmes. These efforts aim to address two critical global issues: food waste and hunger, while empowering local communities through volunteer-driven action. Operating in Thailand, where large quantities of surplus food are wasted despite widespread food insecurity, these programmes seek to bridge this gap by efficiently redistributing excess food to those in need.

The "Food Rescue" programme aims to collect surplus food that is safe for consumption but would otherwise be discarded. The food is then transported using dedicated trucks featuring safety and preservation equipment to communities in need.

The "Rescue Kitchen" programme takes this a step further by transforming rescued ingredients into nutritious, ready-to-eat meals. These meals are distributed to underserved populations, ensuring that beneficiaries receive wholesome food in a dignified manner. The programme also involves community members in meal preparation and distribution, fostering a sense of collaboration.

A vital component of these initiatives is the expanding network of food rescue ambassadors and community coordinators. These individuals play a crucial role in educating local volunteers, managing logistics, and ensuring the sustainability of SOS’ programmes. Volunteers are trained to identify surplus food sources, handle rescued items safely, and engage their communities in raising awareness about food waste reduction and hunger alleviation.

Through its programmes, SOS aims to scale its operations and reach more communities across Thailand. Its efforts go beyond providing meals: the organisation seeks to create a sustainable food system that reduces waste, improves food security, and protects the environment. By diverting food waste from landfills, reducing greenhouse gas emissions, and promoting responsible consumption, it is working towards a more sustainable future.
